Chile-Cilantro Marinated Shrimp


Ingredients

Marinade
1 bunch cilantro, chopped coarsely
1 habanero chile, chopped
4 shallots, chopped
2 lemons, zested
2 limes, zested and juiced to 1/4 cup (juice more limes if necessary)
1.5 cups coconut milk
1/4 cup soy sauce
1/4 vegetable oil

28 large shrimp, cleaned, deveined
7 skewers
Marinade


Puree all marinade ingredients in a blender. Reserve 1/4 cup of the marinade.

Marinate shrimp in a bowl for 3-4 hours. Skewer shrimp (4 shrimp per skewer). Grill 3-4 minutes per side.

Server with reserved marinade for dipping.
