Spice Rub/marinade for pork

Ingredients

1 tsp garlic powder
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp salt
1/2 tsp pepper
1/2 tsp oregano
olive oil

Directions
1. mix dry ingredients in a bowl
2. cut up pork tenderloin into chunks
3. put pork in ziplock bag.  add oilve oil to coat.  dump in spice mix.  shake to coat.
4. marinate in fridge 2-3 hours.

*will also work with lamb.

Asian Flavored Marinated Chicken

Ingredients

  • Chicken
  • Soy sauce
  • A few drops of Sesame oil
  • Honey
  • Maggi Seasoning
  • salt/pepper
  • onion powder
  • garlic powder
  • ground ginger
Directions
  • Combine all ingredients in a large ziploc bag.
  • Seal bag and shake to mix.
  • Add chicken.  Marinate for at least an hour.
  • Saute chicken in a pan on the stove.
This chicken works great with and asian-inspired meal.

Balsamic Marinated Pork Tenderloin

Ingredients

  • Balsamic Vinegar
  • EVOO
  • Honey
  • salt/pepper
  • Thyme (fresh if possible)
  • Rosemary (fresh if possible)
  • Pork Tenderloin
Directions

  1. In a large ziploc bag, combine all the above ingredients, except the pork.  Close bag and shake up marinade.
  2. Add pork, seal bag, marinate for at least one hour.
  3. Preheat oven to your oven's specific cooking method for a pork tenderloin. 
  4. Roast tenderloin, saving marinade.
  5. In a saucepan, boil marinade, reducing sauce to half.  If you need more marinade, add more of all of the ingredients to saucepan before boiling.

Chile-Cilantro Marinated Shrimp


Ingredients

Marinade
1 bunch cilantro, chopped coarsely
1 habanero chile, chopped
4 shallots, chopped
2 lemons, zested
2 limes, zested and juiced to 1/4 cup (juice more limes if necessary)
1.5 cups coconut milk
1/4 cup soy sauce
1/4 vegetable oil

28 large shrimp, cleaned, deveined
7 skewers
Marinade


Puree all marinade ingredients in a blender. Reserve 1/4 cup of the marinade.

Marinate shrimp in a bowl for 3-4 hours. Skewer shrimp (4 shrimp per skewer). Grill 3-4 minutes per side.

Server with reserved marinade for dipping.

Chef Jeff's Marinade (for steaks or chicken)

Ingredients
1/4 cup olive oil
1/2 cup soy sauce
1/4 cup Grill Mates Montreal Steak Seasoning

Combine ingredients in a large zip-lock bag. Shake well. Add steaks to the bag. Marinate 1-2 hours.

Greg's Famous Marinades

Ingredients
1/4 - 1/2 cup of Balsamic Vinegar
1/4 - 1/2 cup of Lime Juice ( bottled is ok )
1/8 -1/4 cup of Olive Oil
1 cup Fresh Cilantro ( chopped )
1 or 2 cloves of minced garlic

Combine all ingredients. Mix well.

Marinate your choice of meat (this recipe originally called for 2 - 3 lbs of Venison cubed with all sinew and silver removed) for 24 hours.

Grill with metal skewers.

This can be served on rolls, buns, or Italian bread - add more fresh cilantro to taste.

Ingredients
1/2 bottle of zesty Italian salad dressing
1/2 regular Coke (no Pepsi, no diet, no caffeine free)
2 tablespoons Worcestershire sauce
2-3 tablespoons of minced garlic

Combine ingredients and marinate meat 24 hours. Grill it.

Tequila Lime Shrimp

1 cup tequila
1/2 cup freshly squeeze lime juice (4-5 limes)
1/2 cup chopped cilantro
1/4 cup diced red onion
4 garlic cloves, chopped
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1.5 pounds shrimp, peeled, deveined

Combine first 8 ingredients in a large casserole dish. Mix well. Add shrimp. Marinate 1 hour.

Heat large skillet over medium-high heat. Add shrimp and marinade. Cook 5 minutes or until shrimp is done.

Garnish with fresh cilantro and serve.
